I do think it would a nice improvement if you'd put a link to the root site in the SharePoint app bar. That is a great idea. However, the app bar has 2 downsides;
1) The home icon (house icon; global navigation) of the app bar keeps dissapearing. A hard refresh of the page does the trick, but next time it could be gone again. So it doesn't really stand out.
2) Putting the link in the app bar has an extra click added to it.
Apart from that, the text "SharePoint" doesn't suggest you're going to a starthub for SharePoint. The app bar is much more logical for that. I'd rather go to this start page when I'd click on my user account or something, because after all it's directed at me personally. So having the text SharePoint directing to the root site, or even just let it be text without a link, would make more sense from a user perspective.
