Hi,
1. you should run an assessment of your existing DC with Azure Migrate/other tools. This would assess everything and then following this if you wanted to only select one application you will have data on the dependencies, etc.
2. There are several frameworks you can follow to build your landing zone and deploy as per best practice (already linked in other replies)
One possible option is if your company has a MS partner organization you can speak to them about getting assistance-they can help you using MS funding such as AMM and also get you connected to Fast track.
