I would suggest buying a license for Office Home & Business 2024.

This gets you a copy of the real, classic, Desktop Outlook 2024. Outlook 2024 is NOT the New Outlook (even though many web sites mistakenly call the New Outlook "Outlook 2024"). Outlook 2024 is NOT the MS365 Classic Outlook (but MS365 Classic Outlook was based on Outlook 2019). Outlook 2024 is the latest in a long line of Desktop Outlooks, from Outlook 2007 thru Outlook 2019.
You can then use "standard" IMAP to connect to your GMail account and, or course, keep copies of everything on your PC if you wish.

Thanks for responding.
Whilst this sounds like a good solution, for me it is too pricey. I'm not the kind of person who can just fork out $250 USD per seat for my house.
Also, it doesn't really answer the question of: how can I make IMAP work in the subscription version?
