Changing email providers, Can I just change server settings

I am leaving an update to my question. Before we changed email providers, we exported our OST files to PST files. Then we just changed the server settings and Outlook connected to our new email provider. We did not have to setup a new profile. But when we logged into the new email providers server the Outlook client synced to what was on the new email providers server which was nothing, so we had to import the PST file. It would have been much easier and faster if our Outlook clients had synced what was in the OST file up to the new server, but I guess that is not how it works. Thanks for the reply's
